Since tasting Cretora’s Potato Salad, Rachel is a convert (Cretora, by the way, is kin to Rachel’s husband). Now, I have to say that this salad with its added eggs and rich, creamy dressing does look gorgeous. And Rachel is adamant that once you have tasted this, ‘you will never make any other potato salad’.

This wonderful dish will serve up to 25 people.

As June, herself, says about her lovely, Minty Egg Salad : ‘Chunky, crunchy, creamy… it’s got it all’. And, this is such a versatile dish; it can be served with, for example, your favorite savory crackers, or even used as a tasty sandwich spread.

Best of all, you can prepare this a day ahead, if you choose. And, don’t think that this must be eaten chilled – it’s delicious freshly prepared, with a knob of butter.

If there’s one thing better than a tasty dish, it’s a healthy, tasty dish. And, I think that this delightful salmon/salad combination falls into that category. In fact the recipe states that ‘the leftovers are even better to eat for lunch the next day’.

This pasta salad looks so crisp and refreshing. Imagine the delicious mix of melon and mint leaves, alongside the tartness of a little vinegar and lemon juice. The combination of textures is also very inviting.

This salad is delicious served at either room temperature or chilled.
