Grilled Peanut Butter Honey Banana Waffle Sandwiches

Gee wizz! This amazing feast-on-a-waffle is a mouthful in more ways than one. This is one well thought out waffle though – there’s even some reasoning behind the ingredients, and the fact that it is grilled. As Trish explains, ‘(grilling) makes the peanut butter so soft and creamy and the little bit of honey makes the sandwich just a bit sweet – perfect for the kiddos!’

I can’t make up my mind whether to have this gorgeous looking waffle sandwich for breakfast, lunch, or dinner!

Vicki’s Homemade Crisps

These wonderful crisps (‘potato chips’ if you live outside the UK) came about due to clever Vicki getting a hunger on but finding that she was all out of store bought crisps. Her method of choice was to use good quality potatoes and to cook in the microwave. And, as Vicki suggests, if you have one you might choose to slice the potatoes with a mandoline.

Total prep and coking time is around 10 minutes.

Healthy Whole Grain Stuffing

As Kimberly tells us, a large part of the pleasure in this lovely looking stuffing, is due to its colorful appearance and the fact that – due to the ingredients – it could be deemed ‘semi-healthy’. Stuffing is also one of those side-dishes where you can easily add, or substitute, your favourite or preferred ingredients – which largely explains how Kimberly came up with this tasty dish in the first place.

Cooking time is 30 minutes.

Empanada Joe’s

If you are a fan of Sloppy Joes, then you’ll love this inspired Empanada Joe. The spiciness of the filling is totally within your control, and you can even add your favorite cheese for some stringy goodness (the recipe suggests mozzarella). And, all in a delicious, palm-sized pie-crust case!

Remember to let these cool a little before tucking in (to avoid burning yourself!).

Cuban Pork Sandwich

What does Robin says about this lovely looking, filling sandwich : ‘I really really mean it…this is the best sandwich I have ever had!’ I’m guessing that this is something to do with the delicious, marinaded pork shoulder; or the caramelized onions; or the fresh ciabatta rolls! In truth, it’s all about having a delicious combination of flavors.

This sandwich does involve a fair amount of prep.

Amazing Peanut Butter Balls

For a moment there, Jenny was advising that these decadent Peanut Butter Balls could be given out as seasonal gifts. Then another thought crossed her mind : ‘Or just eat them yourself.’ We’ll go with that latter thought, I think!

For those who don’t already know, Rice Chex (which is one of the ingredients) is a breakfast cereal (which could be substituted).

Here’s another one of those family favorites that we love to share. How about a gorgeous chicken marinade that is described as ‘classic, tangy, and sweet’? Even better, there are no exotic ingredients in this one, so you will likely have all of the ingredients at hand.

Make extra and store in your refrigerator.

Buffalo Chicken Dip

Jen is not even a big lover of ‘Buffalo’ flavor, or even of blue cheeses. But she finds this to be one of those dips whose addictive properties make it so hard to walk away from. Moreover, if you thicken things up by adding more chicken, this makes a spectacular sandwich filling.

Word of advice from Jen : ‘make more than you think. It goes quickly’. I’ll bet it does!
